1/4 cup chopped fresh parsley leaves " salt and freshly ground black pepper to taste For the dressing: 3 tablespoons extra-virgin olive oil 2 tablespoons white wine vinegar or apple cider vinegar 1 teaspoon honey or pure maple syrup 1 clove garlic, minced 1 teaspoon Dijon mustard " salt and freshly ground black pepper to taste Directions: 1. In a large bowl, combine the lettuce, tomatoes, cucumber, red onion, avocado, feta cheese, and parsley. 2. In a small bowl or glass jar, whisk together the olive oil, vinegar, honey or maple syrup, garlic, and Dijon mustard. Season with salt and black pepper to taste. 3. Drizzle the desired amount of dressing over the salad ingredients and toss to coat. Serve immediately. Enjoy!
